Can this Parker really only carry 4-5 people and 900lbs max... That really doesn't sound right but I believe thats what the data plate said.

1100LB Doesn't seem like much for a boat this size. I mean I am 6'3 270 my brother is about the same thats 540lb RIGHT THERE WITH NO GEAR. or another adult

Mine reads different. Only 6 people or 846 pounds. Mine came with a cockpit mounted 36 gallon bait tank which weighs in around 350# full; I'm just guessing but that may be the difference.

Very interesting. Your logic on the on the bait tank vs the "Persons/LBS" number seem like that may be the reason, especially if it was factory mounted. The "Persons/Motor/Gear" number is off by an even greater amount though. This would be a good one to check with the folks at the Parker plant on. I can only think of 3 reasons for this.
1. Bait Tank
2. They changed it in 2007
3. Someone at the plant just put the wrong sticker on.

If you get the answer let us know.
