When Drifting which way will the 23 deep V pilothouse drift? Tail to wind ??-- Sideways Or ??

That has been my experience as well.

Yes, stern to the wind, generally. But if there is a strong swell coming from a different direction and a more gentle breeze (<10 kts) then I have seen her quarter to the wind at times (stern quarter).
