Is there a preferred method to remove the pedestals from the live well surface. Screws came out without trouble, presumably pedestal base (original) is also glued down with 4200 or 5200. Swapping out for a leaning post.

Depending on what was used to seal the base(s), you might want to try some anti-bond.
Be very careful prying the bases up tho, especially if 5200 was used. That stuff will lift the gelcoat off.
When you re-seal the leaning post, use something like Lifecaulk. You only need to seal it, not bond the part.
 
Steady pressure from something like a bottle jack or car jack will work.

Maybe between the 2 posts if you have 2, pump it up easy then let it sit for a while gradually increasing pressure,
 
Without Anti-Bond I have used smallest guitar string stretched between 2 hardwood handles, like a saw, to cut thru the gelcoat/adhesive/pedastal base interface. Have also used Exacto knives to cut the edge seal first.

IMHO do NOT use a jack or great pressure without some cutting tool or Anti-Bond 2015 to assist ... or you DO RISK tearing of gelcoat and/or FRP layers!!!
