prop cavitation or prop slipping on hub?

I took my new to me- 2005 2520SC transom mounted 225 yamaha 4 stroke- out for its maiden voyage yesterday. When I made an abrupt turn (either way) with the trim tabs down, the motor would slip, doesn't seem to do it with tabs up (nose up) If I do a "hole shot" going straight I did not get slippage.
Is this normal for an outboard? Should I get my prop re-done?

Also what RPM should I get best economy? What is the highest RPM I would want to run at on a usual basis. It will run at 5K wide open, but I don't think I would leave it there very long It's my first stroke so I don't have a "feel" for her yet

Its just cavitating off the tabs, your engine may be mounted too high, but usually that is not the case.

Switching to a 4 blade propeller will make that go away.
 
Most boats require trimming in the OB before any abrupt turn (your words) without ventilating.

5K RPMs is way too low .. I believe that to be a 5500 RPM max motor. You want to be no more than 200 RPMs off max @ WOT.

Max fuel economy would be somewhere around 4K RPMs.
