I just bought my first boat, a (2003) 2120 sport cabin modified deep v. When I'm running fast (25-27 knots) through a 1-2' chop should I trim my bow up or down? Sometimes I see guys running fast with their bow up high but they seem to bounce a lot. I try to keep my boat trimmed level but I feel like I sometimes will plow under a wave.

experiment with different trims and different sea conditions. For chop, try tilt outboard up about 2-3 bars on tilt indicator, and tab bow down until porpose is gone and the "chop" is cut, sometimes just a little more throttle past just plane can help to level out and move right along in the chop. Although I have a deep V I was in some real slop today head and following seas not one splash over the rail! it comes with experimenting with throttle, engine trim, and tabs. Parkers ride awsome!
