Can you put a small steering console setup above the t-top of a 2510 DVWA?
The t-top is strong but not as sturdy as the 2520? Any advice would be appreciated
 
The quick answer is yes. There are a few walk arounds that have them already. Make sure you take it to a well known fabricator that specializes in towers. Not just an aluminum guy who can bend pipe and weld. You have no clue the forces that the boat puts on the structure up there. I had a great guy down here in FL. Alot of ocean running and no issues on the tower. Pay to do it right and if you cant afford it wait till you can.
 
Just saw a 2510 in San Diego last week with a T-Top and steering console/seat/shade up top. Looked cool, but a lot of tubing. If I see it again, I'll snap a pic.

He is actually doing a belly rail for our 2520 DV as I type this.

We asked PYT about that boat and he said that project was one of the most eloborate / $$$$ efforts he has done - lots of bends/supports/custom. Because its so high, you will likely also want to have it be 'retractable'.

Concur with the 'forces' comment from BradV. Don't scrimp.
