Can anyone tell me how much chain and what pound fluted anchor is best for a 2520 DV fishing offshore in the gulf? Thanks

I usually recommend a boat-length of 1/2" chain, and an anchor between 12 and 25 lbs. It makes a huge difference in choosing a brand/model of anchor. Even within a company, say Danforth, there's a big difference between a basic Danforth, and a Danforth Hi-Tensile.
A basic Danforth: a 14# anchor is rated for a 31 foot boat.
Danforth Hi-Tensile: 5# anchor is rated for a 31 foot boat.

Nonetheless, I usually go with overkill. Our 2520 has a 25# Delta, 30' of 1/2" chain, and 600' of 1/2" nylon 8-plait rode.

Our 42' WesMac has a Navy 105#, 50' of 3/4" chain, and 900' of 3/4" nylon 3-strand.

Plus, bottom type will determine the best anchor for you. If its rocky, a danforth-style won't hold unless it gets wedged. If its really muddy, it'll drag and you'd be better off with a plow-style anchor.

I have about 15' of chain and a ~12lb danforth on my 2520DV. It holds extremely well.

I used to have a much heavier danforth, but found it didn't hold much better than the 12lb'er I have now.

I have about a 12 pound fluted with 12 foot of 1/2 in chains that works well until i get in 3 to 4 ft seas.
someone suggested that i go to a 22 pound

If you have a windlass, the size of chain will be dictated by what the gypsy will handle.

As for length, 1.0 to 1.5 times the boat length is recommended by Chapmans.

I run 30' of 1/4" BBB chain and 250' of 1/2" three-strand rope for the anchor rode. Attached to that is a 20 lb Delta fast set. It always nails itself to the bottom.
