building a custom fish "coffin" box

I thinking about making a "coffin box" that will fit between the front benches of my 25' parker center console special edition. anyone made an insulated fiberglass box before?

what type and thickness of insulation to use ... dow board, spray foam others.

also what material and thickness to make the backing out of...1/4, 3/8...plywood, marine lumber, pvc board

any specifics on hardware or things to be careful of

any knowledge on design and building will help

I also have a 25 SE and have a full fish box built in to the stern. Not insulated, do you have that model. I am in the process of insulating it now. We use a large cooler in the front between the seats but when you have 4 or more people there is now where to go.
