Just got a 2520 that was slightly used and have no idea how to service the small portable head.

Do not know if the original owner left me any surprises but I would like to start anew.

So how do I empty it and do I have to add anything after cleaning?

Those portable ones are easy.

There is a top and bottom half. One holds the water to flush, empty it if not already done, rinse it, see if needs to be cleaned, refill it and put in some head treatment mix.

The other half holds the good stuff. There is a drain cap. Remove it from the boat, see if it contains anything. If so, dump in toilet, wash and sanitize it outside if it is real old. If not, rinse it out. Then check the gasket on the drain cap, make sure the flush pedal operates freely, and put some head treatment in it too.

Then finally clean and sanitize the outside of the assembly, put it back together and break the seal!

My partner and I have just decided to leave the mini-head at home unless we have the ladies out (which in our case is a very rare occurrence.)

I have lived with the bucket for years and it seems to be very reliable, and easy to clean.
