...I've been hearing a lot about fish tacos and it seems to be a SoCal thing. Any Parker brethren out there got any good recipes to try???

Well after eating that it looks like it will give you a Buring ring of Fire!!!
 
Any mild white rockfish grilled and chunked. Dice some cabbage with fresh cilantro and onions to garnish the fish. Mix up a little Ranch dressing with equal or lesser amount of Tapatio or any of your favorite Mexican hot sauce to taste. Fill a soft, warm corn or flour tortilla with the fish, garnish and sauce, throw in a couple of Coronas and you've got an easy summer picnic.

You can experiment and get as fancy as you want, but I like to keep it simple.
