Depending on how you are rigged, 9 to 10k is the right trailer for a 2520.
Options... torsion axles (lower ride height), LED lighting, disc brakes... it all depends on what you want.

Rollers or bunks is a personal preference.
I like the much lower maintenance of bunk trailers (with additional keel bunks).
 
Do you think I could get away with a 7000# gvwr? It's a Parker 2520 deep vee diesel and the fuel tank will hardly ever be full when it's on the trailer.

I wouldn't try it if it were mine.
The fuel tank is the least of your worries. That chunk of iron in her belly... that is what gives her her weight.

My 2520XL full of fuel, fresh water, safety gear, electronics, and a small amount of fishing tackle, weighed in at 8,920 pounds sitting on a Load Rite 27T7400G2 trailer. If you go with a galvanized trailer, pay attention to the frame size. Load Rite has an 8200 pound trailer that is the same as my 7400 pound trailer except it has the 6 inch frame and a double re-enforced wishbone crossmembers where the tongue bolts up. I know of a dealer that has a BRAND NEW leftover one that has been sitting on their yard for a couple of years. PM me an I can give you some info on where it is.
