Dead rise questions on 23's

I'm pretty much set on moving from my 1801 to a 23' Not sure which model -I like CC's but the wife and kids ...Anyway I'm not sure about deadrise - most have the 21 deg and the SE has 14 deg like my 1801. What is the pros and cons it will have with a 23' . I really like the DVCC - But will it be stable at rest or trolling ? I'm confused with the deadrise thing.

The more deadrise the smoother the ride in choppy water. It also rolls side to side much more when idling or anchored up. There is right much more freeboard on the DV compared to the SE. I had a 23SE and I never felt like it didn't ride well. You will think you are on a battleship compared to the 18
 
The balance on a 23 Parker is just about perfect between deadrise and beam width. I get very little side to side roll when anchored and even less on a slow troll. Even when some poo poo head wakes me with their battle ship at anchor, I will knock side to side once or twice then the hull design caIms it down . While there are deeper V's out there, but usually have less beam making them roll, the Parkers combo of beam width and deadrise make a very stable platform for reducing side to side roll.
 
Thanks ...Speed / gas /efficiency any different with the 23 's - i'm sure the SC is a lot heavier and uses a bit more gas ....
